Located in Ise-Shima National Park and located on a hill overlooking the Rias coast, the all-inclusive resort hotel "Grand Mercure Ise-shima Resort & Spa" (Location: Shima City, Mie Prefecture / General Manager: Ryuya Sakano), Mie Prefecture's proud brand oyster "Matoya Kaki" was opened on April 1, 2026 as a new food base where you can experience the nature and food culture of Ise-Shima. The restaurant, which has been revived by the existing building on the hotel premises and has become a new stage, will be responsible for the operation of the 101-year-old Sato Farm (Representative Director, Daiki Hamachi), an oyster farming company in Matoya-wan Bay. "Matoya Kaki", raised by traditional aquaculture techniques that have been handed down from generation to generation, is an irreplaceable blessing nurtured by the rich sea of Matoya-wan Bay. By expressing the blessings of the sea of Matoya-wan Bay and the thoughts that producers have carefully preserved as dishes, we will provide food experiences unique to Ise-Shima by delivering them in the most delicious state. "Bettei Mataya" was born with the desire to be a base not only for accommodation, but also for transmitting the charm of the region while linking tourism and the primary industry in the region. .

Matoya-wan Bay, located in the Ise-Shima area designated as a national park, is a blessed sea area where phytoplankton grows with abundant nutrients from three rivers flowing from the mountains. It is known as an unparalleled environment suitable for oyster cultivation in Japan, blessed with abundant nutrients from the mountains and gentle currents. Founded in 1925, Sato Farm has built the history of oyster cultivation under the rare natural environment of Matoya-wan Bay, Shima City. Tadao Sato, the first generation, established a revolutionary farming method that greatly enhances quality, hygiene, and production efficiency, and introduced the world's first patented technology to sterilize oysters, "UV Purification Method," to establish a technology that can safely provide raw oysters.

 

The fifth generation, Daiki Hamaji, has inherited its stance of continuing technological innovation to respond to changing social conditions and the natural environment while preserving tradition.
