New Food & Beverage CONCEPT is “Grand Mercure / Mercure Marche”. The new menu will be released from April 1, 2026.

Grand Mercure and Mercure 22 hotels operated by Ako, one of the world's largest hospitality groups based in Paris, France (Japan corporation: Minato-ku, Tokyo; Japan Representative Director: Dean Daniels) will begin offering new signature menus based on Food & Beverage's new CONCEPT "Grand Mercure/Mercure Marche" on April 1, 2026, the second anniversary of its opening.
Food & Beverage New CONCEPT “Grand Mercure / Mercure Marche”
"Marche" in New CONCEPT is a French word meaning "a place to carefully select seasonal ingredients". While cherishing the idea of delivering exciting food experiences that are born only in the season, we are particular about selecting the most suitable ingredients for each recipe. "The fun of discovery" that makes you want to stop your feet unintentionally, the "excitement" of a live kitchen where you can finish cooking in front of you, and the "fresh experience" unique to your travel destination. We will develop a menu that allows customers to experience the world view of Marche, a travel destination where everyone can enjoy casually and enjoy the five senses.
By making the buffet into a Marche format, the process of selecting, watching, and talking is created, giving you a sense of live and excitement in ingredients and dishes, and customers can experience "unusual" and "rememberable experiences". In addition, by introducing stories such as producer name, production area, background of ingredients, etc., the value of cooking can be easily understood, leading to an improvement in meal satisfaction. Furthermore, the aim is to convey to customers the hotel's efforts, such as local production for local consumption, connections with the local community, and a sustainable attitude.

It was born to feel the excitement of walking along the Marche on your trip and to enjoy the most delicious moments of ingredients. By wrapping it in wrap paper, we offer it in a style that you can enjoy more easily. (Grand Mercure offers three kinds, Mercure offers two kinds of Pludo Polk Benedict and Salmon Katsulet Slider or Chicken Bao)
Pulldo pork benedict

Pulled pork with a softness that is slowly stewed and deep taste, as if served from a large pot at a Marche stall. Put a pouched egg on the finish and serve it with cheese sauce. If you like, you can enjoy a change in taste by adding wacamoredip, red cabbage and beat lape.
Salmon cutlet slider

Juicy salmon fry and refreshing Dill sauce are added to make it light. It is a light but satisfying taste like a little refined treat that you meet at the seaside Marche.
Chicken bao

Sands grilled chicken with sweet and sour sauce on other steamed bread. I imagined the standard menu of a Marche stall that I would like to pick up. It is recommended for ADULTS to add spicy mayonnaise to make it spicy.

The ingredients selected by Marche are carefully finished in a quiet place called the hotel kitchen, making it a modern classic dish of European local cuisine. We provide a memorable food experience. European local cuisine, which is the origin of Marche culture, has a high affinity with a Marche-style buffet as a dish that naturally conveys the story of ingredients and land and creates conversations and experiences.
Boiled beef (buff breze)

Traditional French cuisine born from wisdom to taste delicious meat. You can enjoy the full taste of beef with healthy quinoa over time. The added carrots are seasoned with local miso from each hotel.
Fish knel

A local dish that represents Lyon, France, created by female chefs who were active in the 18th century. Enjoy "French-style Hanpen", which is made into dumplings by adding flour to fish surimi, along with a bisk (* 1) filled with the taste of the sea and a duxel (* 2), which has a rich mushroom flavor.
