Introduction of menu contents
'Kyoto meat pottery plate-yaki'

Kyoto meat has been defined as "the variety is Japanese Kuroge" and "the longest breeding in Kyoto Prefecture" (* 1). By baking the melting marbling and delicate sweetness with a ceramic plate, the flavor of the meat is maximized. The Kyoto vegetable "Manganji Togarashi" originated in Maizuru City is prepared. The soft pungency and subtle sweetness enhance the rich taste of the meat and create an exquisite balance.

"Miyazu abalone stewed oyster sauce"

Fresh abalone grown in Miyazu Bay, also known as "Kyoto of the Sea," is stewed slowly and softly with a special oyster sauce with a deep and special sauce. It is an unforgettable dish that blends the flavor of the abalone that spreads every time you bite and the rich sauce.
Comments from the menu creator
■Chef Kousuke Kawaguchi - "Kyoto Meat Pottery Sheetyaki"
In order to fully enjoy the rich flavor and aroma of Kyoto meat, we have made it a ceramic plate that can be adjusted according to the baking preferences of the customer. Adding Manganji pepper, which originated in Maizuru, adds color, and you can feel a moderate accent to the rich flavor of the meat. I would like you to experience the scent and sound that rises in the process of slowly passing through the fire in front of you with your five senses as part of this dish.
■Sioux Chef Kazuhiro Oba - "Miyazu Abalone Oyster Sauce stewed"
In order to enhance the taste of black abalone grown in the rich sea of Miyazu, we stewed it with a rich but elegant special oyster sauce over time. By skillfully using flavored vegetables and paying close attention to the timing of burning, the soft texture of abalone and the deep richness of the abalone and the flavor of the sea spreads throughout the mouth. It is a dish devised with the desire to make use of the local blessings and deliver a luxurious taste to customers.
