'Kyoto meat pottery plateyaki'

Kyoto meat is defined as "the breed is Japanese black" and "the longest breed in Kyoto Prefecture" (* 1). The melting marbling and delicate sweetness are baked with a ceramic plate to maximize the taste of meat. Manganji Togarashi, a Kyoto vegetable originating from Maizuru City, is prepared for the appendix. The soft pungency and subtle sweetness enhance the rich taste of meat and create an exquisite balance.

Fresh abalone grown in Miyazu Bay, also known as "Kyoto of the Sea," is slowly and softly cooked with a deep special oyster sauce. It is finished in an unforgettable dish that combines the richness of the abalone that spreads every time you bite and the rich sauce.

■Chef Kousuke Kawaguchi - "Kyoto Meat Ceramics"
In order to fully enjoy the rich umami and aroma of Kyoto meat, we have made it a ceramic plate that can be adjusted to the taste of your own preference. The color is added by adding Manganji pepper, which originated in Maizuru, and the rich taste of the meat gives a moderate accent. I would like you to experience the scent and sound that rises in the process of slowly passing through the fire in front of you with your five senses as part of this dish.

In order to enhance the flavor of black abalone grown in the rich sea of Miyazu, we cooked it slowly with a rich but elegant special oyster sauce.
